Since 2016, La Clairière has been chef Shibata’s stage which connects guests with farmers from Japan and abroad and showcase his produce-driven French cuisine with a dash of Japanese sensibility that faithfully interpret flavors of the seasons. Chef Shibata visits every farmer and purveyor he works with in Japan and crafts a collection of delicate dishes that are ingredient-driven and amplify the uniqueness and story of each ingredient.
