SUGALABO, or "Suga's Lab", is chef Suga's venue to introduce his meticulous, produce-driven, and technically advanced dishes to diners. As a long-time Robuchon protégé - who our very own executive chef Mitsunobu Nagae trained with - and a one-time New Yorker as opening executive chef at L'Atelier at Four Seasons New York, chef Suga's cuisine is worldly and cosmopolitan, yet retains undeniable Japanese roots and heavily utilizes French techniques.
